I was out and about yesterday and when I came home, I found this on my doorstep!

Amazing garden fresh vegetables just picked from the garden a couple of hours earlier.

These vegetables were grown from the seed, mulched and grown totally organically by Robert’s sister, Shelton, who lives in Boone, NC, up in the mountains.

This explains why she still had broccoli! I was overjoyed at the bounty:

Russet potatoes, garlic onions, red onions, broccoli, green and purple peppers, tomatoes and what looks like a purple tomato, green beans, red cabbage and green cabbage; it is an amazing gift.

We had just bought corn, kale, collards, arugula and spinach at the farmers market so we will be eating quite good this week.

These were just in time for  a cold day in July, needless to say, I made some amazing vegetable soup.

Garden Bounty Vegetable Soup

  • Servings: about 1 gallon
  • Difficulty: easy
  • Print

TIP: Cut all the vegetables about the same size. Use different shapes for visual interest. Remember everything needs to fit on the spoon, not hang over.

Soup Ingredients

  • 1/4 green cabbage, chopped fine
  • 1 large onion, cut into small dice
  • 2 carrots, sliced
  • 3 red potatoes, diced
  • 1 medium zucchini, diced
  • 10 green beans, sliced
  • 2 broccoli crowns, separated into florets
  • 2 large cloves of garlic, smashed
  • 1 can organic diced tomatoes
  • 1 can dark red kidney beans
  • 1 cup lima beans
  • 1 ear of corn, cut it off
  • Enough water to cover the vegetables
  • 1-2 bay leaves
  • 1-2 Tablespoons salt, to taste
  • 1 Tablespoon fresh ground black pepper
  • 1 splash Texas Pete Hot Sauce

Chop it all up, sweat (cook without browning) the onions, carrots and cabbage, once these vegetables are tender, add the rest of the ingredients.

Bring to a boil and then turn down the heat and simmer until the vegetables are done. Adjust the seasonings and serve.

Butternut Squash Soup Sautéed Apples and Rosemary Flowers

I made butternut squash soup in the vita mix for lunch today. Tasty!

Processing the soup for about 8 minutes heats it and leaves quite a delicate texture.

The texture actually seems to evaporate as it hits your tongue leaving a wonderful rich flavor and aroma behind. It is like eating essence.

Even though it is butternut squash, this elevates simple into the sublime!

1 whole butternut squash, washed

1/2 Granny Smith Apple

1/4 sweet onion

1 teaspoon rosemary needles

1/2 teaspoon kosher salt

1/4 teaspoon white pepper

1/4 teaspoon grated nutmeg

1/4 cup heavy cream

Pre-heat the oven to 350°F. Lightly pierce the squash with a knife in a couple of places. Place the whole squash on a parchment lined baking sheet and roast the squash for 1-2 hours or until done. You can tell when it is done by piercing the squash with a knife. If it goes in without resistance, the squash is done. Remove from the oven and cool.

Peel and remove the seeds from the center of the squash.

Place the squash, and remaining ingredients except the cream, into the blender and process. Begin on low variable and move up to number 10. The mixture should form 4 mounds inside the work bowl. If you want, thin with chicken stock or water at this point.

Process for 7-8 minutes or until the mixture releases steam.

Add the cream and process for another minute.

In the meantime, dice some of the apple and saute in a very small amount of butter. Using a light hand, sprinkle them with cinnamon and nutmeg and a pinch of salt. Set aside to garnish the soup.

Rosemary Flowers

Harvest some rosemary flowers, also for garnish and a great flavor burst.

To serve, ladle the soup into serving bowls, garnish each with sautéed diced apples and a few rosemary flowers.

It’s time again for another Soup on Sunday! Held the last Sunday of January, risking the wrath of  possible inclement weather, Soup on Sunday has always been held on time and on date, except 1 year about 2 years ago. The community really supports this event.

Who wouldn’t like a lot of amazing soup on a cold winter day?

Our culinary department hosts this event every year to benefit local Hospice. Typically we get more and more each year, both people attending and money raised.

Area restaurants bring 5 gallons of a signature soup to promote their restaurant.

To round out the plethora of soups, Great Harvest Bread Company brings an amazing variety of fresh bread, the area culinary schools, Johnson and Wales, Art Institute and CPCC, do both soups and table-breaking loads of desserts, chocolates and cookies.

How it works:

Buy a ticket: $30 gets you in to taste everything available; A $40.00 dollar ticket allows you to pick a bowl valued at $10.00 from the pottery room.

Once you get in, you can eat as much of anything you want. The soup is served up in small bowls so you can TRY to have a bite of every one. With about 35 restaurants participating, if you only ate the soup and ate every one, you’d consume over 1/2 gallon of soup! And that does not include the pizza,

Not many people realize how important the dishwashers are to an event. These Johnson and Wales students volunteered their time and talent to the event and took charge of the dish pit. Thank You!

After the final numbers were tallied, over 770 people came by to support Hospice. The event is the major fundraiser for them and we are all so glad to be able to host and facilitate the event. Everyone gets involved and gives back.

Area clay artists donate pottery bowls for sale starting at generally $10.00 and up. The quality ranges from really talented to rudimentary primitive ( typically done by kids), which can work, depending upon the decor of the area you are decorating. Each year, I buy at least 1 bowl, sometimes 3-4. We enjoy using them throughout the year. Last year I bought  beautiful footed deep soup bowls, in previous years I bought fruit bowls and rice bowls. This years bowl is a condiment bowl, small and lovely; it is the bottom on in the photo below.

This is my 6th Soup on Sunday and now I have 6 hand-made pottery bowls that we use and enjoy all the time.
