What is a Colander? How do you choose one?

Colanders are those strainers you use to drain larger amounts of liquid from things.

Colanders stand alone, you do not need to hold them like you do a strainer.

Here are some different types: There are some funky ones, like cow and chicken colanders;

They can be made from heavy-duty plastic, ceramic, stainless steel, aluminum, copper etc.

I bought one from an artist friend once. This colander was ceramic, hand painted and unique. It had three chicken legs styled out of clay; the bottom half of the bird was all there was, it was white and the handles were the birds wings. Chickens don’t have very big wings. I couldn’t resist the cow colander either.

I like funky kitchen stuff sometimes. If it makes me smile, it gets a place in common use. This colander made me laugh so I bought it. It earned an esteemed spot on the kitchen counter for a while.

Finally time to use it. I place it carefully in the bottom of the sink and drained the pasta in the colander.

I was totally beside myself and wondered why it didn’t dawn on me before that exact moment how I expected it to look.

Well, what happened was not what I thought it would be.

The chicken looked as if it were peeing all over itself; peeing like a racehorse.

That’s just not right. That imagery was all wrong.

My fun time with the chicken colander was over.

I drained the pasta, washed and dried the colander.

It holds a place in the background of my TV show set.

Now, they hold butchers twine

It is no longer used actively. Last I checked, it held several balls of butchers twine. The holes in the body (the perforations for the colander) are perfect twine guides. Thread it through a hole, pull as you need. Only on the TV show though.

I can’t have peeing animals in my kitchen.

When it comes to kitchen tools, you get what you pay for.

Here are a few pointers for evaluating a colander for purchase:

    Take a look at all the different materials. Which do you prefer? Is the chosen material durable for my lifestyle? (Enamel chips)

  • Make sure there are lots of small holes. Small enough to retain peas. Any larger and you limit the colanders use.
  • Colander

    Make sure the sides and bottom have holes, not just the bottom.

  • Make sure it has enough holes, a few will not strain your stuff fast or well enough
  • Will it fit in your sink? If not, where are you doing to use it?
  • Will it fit into the dishwasher?

You can store the colander with the nested stainless mixing bowls.

If you tire of your colander, you can always line it with sheet moss, fill it with dirt and plant herbs or flowers in it. Of course you will need a tray under it to catch any drips from watering.

No matter what, do not allow your friends to convince you a colander makes a good party hat. It does not and you will regret any resulting photos.

How to cook – Outfitting Your Kitchen

Dear Tyler,

SO! You are moving into your first apartment. What an exciting time of your life.

Let’s talk about how to outfit your kitchen so you don’t have to eat out all the time or depend on the university’s dining plan any more.

First you will need some decent pots and pans. There is no need to go buy a full set unless you are planning on doing a lot of cooking. It is best to buy pots and pans as your cooking skills grow.

Always buy the best you can afford. Fortunately for you, I have so many pots and pans to give you but only once. The quality of these should last you a lifetime.

All-Clad and Calphalon are great brands with quality products

A basic set of good quality pots and pans.
These are made by All-Clad – The best in my opinion.

There are a lot of cheap knock offs out there.

As a general rule, NEVER buy a pot or pan with a celebrity name on it like Emeril or Rachael Ray or Paula Dean. The stuff is cheap and not the best quality. It is all about looks not performance.

If you can’t afford All Clad or Calphalon, take a good hard look at them in the store. Pick them up and feel the quality, the balance, notice the construction: how is the handle attached to the body of the pot?

Then, when you shop for other lower priced pots, you will know what top quality feels like and therefore can choose quality when you find it in other pots and pans.

SHOPPING HINT:

You can find All Clad and Calphalon sometimes at Marshall’s, TJ Max, Homegoods, Tuesday Morning all at lower than normal retail prices. They don’t always have them but when they do, they are great values.

If you can’t find them at those stores, larger kitchen stores that carry these brands often have semi-annual sales with free gifts with purchase that are really worth while. No need to ever pay full retail price for them. Take your time and look around.

Yes, this means you need to pack them and move them as you relocate. Now you are accumulating the “stuff” you need to outfit your living space.

More than likely, you will always have a kitchen to cook in from now on.

This is what I recommend you start with:

  • 1- 7 or 8″ non-stick saute pan (frying pan for eggs)
  • 1- 10″ saute pan with lid
  • 1- 2 quart pot with lid
  • 1-5 quart pot to boil water for pasta, making soup etc.
  • A series of graduated stainless bowls – at least 5 in the set
  • A colander or strainer of some kind for straining pasta, vegetables etc.
    • You can have fun with these styles, there are some funky colanders in great colors.
  • A cutting board, get one you like; acrylic or wood, your choice
  • 2 heavy-duty sheet pans – commercial 1/2  and 1/4 sheet pans are best; they last and don’t warp.

Small wares: those things you use and keep in the drawer

  • Microplane–  a hand grater in various shredding sizes.

  • Peeler
  • Manual can opener – be sure to wash it when you use it
  • Bowl scrapers are handy for scooping things out of bowls or off your cutting board
  • Large metal kitchen spoons: one slotted(rectangular openings), one perforated (round openings) and one solid – these really come in handy
  • Heat resistant spatulas and bowl scrapers

    Heat resistant spatulas – lots of uses – only buy heat-resistant ones. It says so on the label. Why? Because they melt if you use them on the stove and they are not heat-resistant. Who wants plastic in their food?

  • Various wooden spoons – use on non stick pans – they are usually inexpensive and quite handy. Just don’t catch them on fire
  • Professional grade stainless steel tongs – they become like your other hands. Great for moving things in the pan without piercing ( meat). Buy sturdy ones.
  • Wire whisk – the thinner the wires, and the more of them, the more whisking/whipping action you get. Thicker/fewer wires are for dense food items, thinner ones for whipping cream, egg whites or making hollandaise
  • A decent corkscrew – you never know when you will need one
  • Set of measuring cups – look for ones that have both standard and Imperial measures so you only need one set
  • Measuring spoons – You will need them
  • Off-set metal spatula – for taking cookies off the baking sheet and flipping food in the pan
  • Several kitchen towels, sponges and washing-up cloths. You will use these for removing hot things from the oven and for wiping up messes and drying your hands.
  • Three knives:
    • 1 8-10 inch Chef knife or santoku (Which ever you prefer)
    • 1 paring knife
    • 1 boning knife
    • Made from High Carbon Stainless Steel- all about knives may come later.
      • Safety Tip!
        When removing things from the oven, make sure your towel is completely dry or else you will end up with a nasty steam burn.

With all of this, you should be ready to start cooking.

When you get these things, wash them and give them a home somewhere in your kitchen.

These are not the typical cheap things you find in most college apartments.

Take good care of your equipment and it will last you a lifetime. I have sent you top-quality pots and pans.  Wash them up after each use. Don’t let your roommate burn them up! 😉

Good pots and pans wash up neat. Use Brillo or SOS pads to remove any baked on grease or stains as they happen. Bar Keepers Friend or Bon Ami are both scrubbing powders that so not scratch so get some to help keep your pans looking brand new. DO NOT use Comet or Ajax, it will scratch too much.

As a general rule, do not put the pots and pans in the dishwasher. Hand wash. Get used to it.

NEVER put your knives in the dishwasher. The heat can make them brittle and break easier.

As I said earlier, I am giving you a great set of pots and pans, just once! You should be able to give your set to your child when they get their first apartment.

Yes, they will last that long and still be like new if you care for them.

They will cost you a small fortune to replace so make sure you take care of them and take them with you when you move.

Strawberry “Cheesecake”, Rhubarb Compote, Oatmeal Hemp Seed Crisp

Strawberries enhance the tartness of rhubarb. Classically they go together like hand in glove. But they don’t have to.

I like strawberries and I like rhubarb, both separate and together.

The local grocery had a sampling table set up promoting hemp seeds for their nutritional value. I picked up a bag intending to use them in a multi-grain bread, but used them instead of nuts in the oatmeal crisp.

So you are really getting three desserts today; you can eat each separate and then together.

Let’s talk briefly about the hemp seeds.

These seeds are not the variety of hemp used to “get high” anymore than you can “get high” from pistachios.

They are delicious, have great nutritional value and I thought it may push the envelope a bit to use them.

You can toast them but the texture is fine so it would be best to use them in something rather than a snack food.

If you desire, substitute finely ground pistachios or almonds instead of hemp seeds.

This entire dish consists of three recipes. Each quite simple.

The beauty is you can eat the strawberry “cheesecake” without the rhubarb compote and the compote without the cheesecake.

The cheesecake in this case is not baked, does not contain as much fat as traditional cheesecake; hence the quotation marks.

Make this with cream, or half and half (even the fat-free kind), Greek yogurt, cream cheese (can also be low-fat) and low-fat sour cream if desired.

Depending upon your choices of regular, low or non fat versions, you can have a pretty nifty dessert.

Recipe 1:

Strawberry Rhubarb Oatmeal Hemp Seed Crisp

Strawberry “Cheesecake”

1 cup of whole strawberries, stemmed and washed

1/2 cup heavy cream or 1/2 and 1/2

1/2 cup plain Greek yogurt

1/4 cup sour cream (optional)

1 8 – ounce package Cream Cheese

1/4 cup confectioners (10x) sugar

4 gelatin leaves or 2 teaspoons powdered gelatin

1 teaspoon vanilla extract

Method:

Puree the strawberries until smooth. Set aside.

Warm the cream cheese slightly in a microwave or wrap in a warm towel for 10 minutes to soften. The cream cheese whips better when soft.

Place the cream cheese in the mixer along with the sugar. Whip until smooth, add the strawberry puree.

Important notes about using gelatin:

If using gelatin leaves, soften the gelatin leaves in cold water for 10 minutes. When soft, squeeze out excess moisture. Add to warm liquid to melt, in this case the warm cream.

If using powdered gelatin, measure out the cold cream into a  heat proof bowl. (Stainless bowls work great) Sprinkle the powdered gelatin over the surface of the cream. Allow the gelatin to “bloom” for 10-15 minutes. Place the bowl over a pot of boiling water (double boiler) to warm the cream and melt the gelatin.

Careful in both cases, gelatin burns and scorches easily. Be careful and pay attention.

If using powdered gelatin follow these directions:

Heat cream and bloomed gelatin until warm and melted in a double boiler.

( A stainless bowl over pot of boiling water works nicely)

Add yogurt, be careful not to scorch, stir until warm and gelatin is totally melted.

If using gelatin sheets or leaves follow these directions:

Add the softened gelatin to warm cream and yogurt.

Stir until gelatin is dissolved.

Continue:

Add the gelatin mixture to the whipped cream cheese and strawberries.

Add the vanilla extract.

Pour the mixture into desired containers: pretty stemmed glasses, ramekins, small bowls, fancy tea cups or a large dish.

I used stemmed “Marie Antoinette” champagne classes for this.

Refrigerate 2-3 hours or overnight for the gelatin to set.

Recipe 2:

Rhubarb Compote with Oatmeal Hemp Seed Crisp

(Or Oatmeal Pistachio/Almond Crisp)

Wash and dry rhubarb

3 stalks of fresh rhubarb, washed and sliced into pieces finger width wide. Be consistent.

1/2 cup sugar or 1/3 cup honey or agave syrup

2 tablespoons instant tapioca

1 teaspoon vanilla extract

Pinch of salt

Slice the rhubarb

Allow rhubarb, sugar and tapioca to sit 15-30 minutes
( this is called “to macerate” in cooking terminology)

Spray baking dish with pan spray or
butter the dish

Fill the baking dish with macerated rhubarb

Wash and slice the rhubarb. In a large bowl, combine the rhubarb, sugar and tapioca and vanilla.

Allow the mixture to rest for 15 – 30 minutes.

Meanwhile make the crisp part.

Recipe #3

Oatmeal, Hemp Seed Crisp

(Or Oatmeal Pistachio/Almond Crisp)

Combine oats, brown sugar, butter and ground nuts or seeds with a pastry cutter

Combine until the mixture looks like this; spread over top of the rhubarb; bake

Bake until golden and bubbly

1 cup old-fashioned oats

1/2 cup brown sugar

1/4 cup whole butter, soft not melted!

1/4 cup hemp seeds or finely ground almond or pistachio nuts

1 teaspoon salt

Combine the oats, sugar and seeds and salt, cut in the butter until the mixture is like coarse cornmeal.

Place the macerated rhubarb mixture into a baking dish, top with the oatmeal hemp seed streusel mixture. Bake for 1 hour in an over set at 350°F or until the mixture bubbles.

Be sure to place a pan under the dish to catch all of the drippings for easy clean up.

To serve, top each chilled strawberry cream cheese dish with a generous dollop of warm rhubarb compote. Make sure you get some of the crisp part for the top. Add sliced or fresh diced strawberries if you like.

Garnish with mint leaf and serve with a smile!

Grilled Watermelon

Uh huh, you heard that, Grilled watermelon.

Get your grill hot, really hot.

Slice watermelon about finger width or thicker slices.

Ingredients for Grilled Watermelon

Drizzle the melon with a high quality Greek olive oil such as Theros unfiltered extra virgin.

Sprinkle Herbs de Provence. Fleur de Sel (or kosher or sea salt) and grind some fresh black pepper over the oiled slices.

Place the watermelon on the hot grill for 3-4 minutes. Once grill marks appear, flip and grill the other side.

5 minutes is all it takes once you have a really hot grill. You want the melon to have some chars on it.

The flavor and texture totally changes and is a refreshing, wonderful treat!

Try it.

Smack your lips and say “Hallelujah!”

Your friends and neighbors will think you crazy at first, but they will soon be grilling their own watermelon and smacking their lips too.

All About Potatoes – What is the difference?

In this post, I will attempt to explain all about potatoes, explain the varieties available and when to choose one over another.

What is the difference between potatoes?

Next time you go shopping for potatoes, you will have a lot more knowledge about them after reading this post.

Have you ever:

  • Tried to make french fries from scratch only to have them turn out limp and soggy?

  • Tried to make potato salad or put nicely diced potatoes in a soup only to have the potatoes all fall apart?

  • Ever had your mashed potatoes turn out like glue?

  •         Had a baked potato explode on you in the oven? (Technique rather than variety is the secret)

It all has more to do with the potato you chose to make the dish with than your culinary skills, which I am sure are impeccable.

There are few categories in the potato world. Basically there are low-moisture, high-starch varieties and high-moisture, low-starch varieties.

The high starch varieties will fall apart if cooked in liquid but create light and fluffy mashed potatoes, crisp french fries and crispy chips.

Russet Potatoes – notice the dark, thick skin. Compare this to a new potato which has a thin tender skin.

The russet is the king of the low moisture-high starch category. These potatoes have thick dark skins as opposed to the thin tender skin of new potatoes.

Yukon Gold: thin skin, shallow eyes and golden flesh

The low starch – high moisture category belongs to red potatoes, Yukon gold, new potatoes. All potatoes with a tender thin skin will be high moisture, low starch potatoes.

These potatoes hold their shape in soups, casseroles and salads. Their tender skins are often deep-fried and used a receptacles for dips, spreads, chili and salsa.

Go to the store and buy some of each variety and compare them. Cut them, notice the textures. Cook some of both using a variety of cooking methods and compare results. Make notes so you can remember what you discover during this experiment.

Then we have sweet potatoes and yams.

Yams are not as high is sugar as sweet potatoes are but they taste just a good. Be careful with large varieties of these potatoes as they can get very stringy. Choose smaller, even sized, good color and smooth skins when selecting these potatoes for purchase.

Typically, sweet potatoes and yams can be used interchangeably and can be applied to a many cooking methods. The skins are not edible. Colors vary from pale yellow to deep orange and now there are garnet and purple varieties too.

Tiny new potatoes, fingerling potatoes, “potato gems” are all varieties that belong in the low starch, high moisture variety. their size and shape make them special in that you can cook them without peeling or cutting them if you wanted.

Some of this variety are so moist and tasty, you never miss the butter.

Have you ever seen a blue or purple potato? They really are blue or purple throughout. And they stay that way when cooked.

When you have purple asparagus or purple carrots, they lose the purple color when cooked.

Purple potatoes do not! For the most part, you can use them as a high moisture low starch potato, but they do mash well without turning into glue or paste.

Additional varieties from the potato world include Malanga, Boniato which take to any cooking method potatoes do.

Boniato, inside flesh is white. Use these as you would sweet potatoes.

Here in the US, Melissa’s Brands offer several unusual varieties not only of potatoes but of all unusual, hard to find produce items.

Be adventurous and try a different kind of potato next time you go shopping.

When choosing what potato you want, if you want a potato to hold its shape as in soup, choose a high moisture low starch.

For fluffy mashed potatoes, select russets and run cooked potatoes through a ricer, not a mixer. perfect mashed potatoes is another post soon.

For great french fries you need a low moisture potato with high starch. Again russets are your best choice but you can also use “All-purpose potatoes” or “chef’s potatoes”. These labels indicate a moderate amount of starch and moisture and can be used in any potato recipe.

This is why sweet potato fries are mostly limp, they have too much moisture to get fluffy like russets do. Sweet potatoes also break down your frying oil faster due to the amount of natural sugar in the potato.

Quick run down:

Fluffy baked potatoes, mashed potatoes and french fries use russet potatoes

To hold the shape as in soup, potato salads, use red or white skin potatoes, you can also find blue ones in this category.

Never store potatoes in the refrigerator. The cold converts the starch to sugar.

Always store potatoes in the dark, in a dry place. I keep mine in a cabinet that isn’t used much.

If potatoes area stored in light, they will develop a green skin which is a toxic substance known as “solanin”

It would take a boatload of solanin consumption to have an effect, but it is an intestinal irritant. You choose.

There will be doing a series of posts of cooking potatoes and selecting the right one for the recipe in the next few weeks.

Potatoes Au Gratin

I have been on a comfort food kick the past few days; Potatoes au Gratin are one of my favorite creamy delicious side dishes.

We always had them as a kid sometimes from scratch and sometimes from a box. The box variety always fascinated me.

The clear plastic looking chips, the powdered sauces, pour over boiling water and bake. Voila! Potatoes au gratin or Scalloped Potatoes all from a box. It was amazing stuff.

Making the same potatoes from scratch is far more satisfying, both nutritionally and esthetically.

First you have to get some good starchy potatoes – russets are the best as they are a ‘high-starch, low moisture’ category of potato.

Peeling is your option, but be sure to scrub them clean.

Have everything ready to go before you start slicing the potatoes so they don’t turn colors on you.

If you don’t know what I mean about potatoes turning color, take a slice and just let it sit out on the counter or on a plate. Look at it again in 5 minutes. It is oxidizing with exposure to air. Process potatoes quickly to avoid this color change happening.

“Green” on the potatoes is called “Solanin” and it is a sign of a potato that has been stored incorrectly with an exposure to light.  To avoid green potatoes, always store potatoes in a cool, dark place.

While it would take quite a bit of solanin to cause severe damage, it is an intestinal irritant. Simply cut away the green with your peeler. It isn’t very deep.

Do not store potatoes in the refrigerator, the cold converts the starch to sugar. Restoring to room temperature, over a few days will convert back to starch.

I made this dish for Robert and me but it would easily feed four. I used an All-Clad oval stainless baker pan, you can use any oven-proof dish you want. Adjust the quantities if using a large pan.

Potatoes Au Gratin

Serves 2-4

  • 1 or 2 large russet potato, peeled and sliced thinly
  • 4 whole large shallots, peeled and sliced thinly
  • 1/2 container Herbs and Garlic Boursin cheese (or 1/2 cup any shredded cheese of your choice)
  • 1 cup heavy cream, brought to a boil
  • 2 tablespoons flour
  • Salt and pepper
  • Optional: Monterrey Jack cheese to top and get all golden brown

Method:

Thinly slice potatoes and shallots by hand or use a mandolin.

Be careful when slicing on a mandolin! Slicing on the mandolin ensures even slices so they cook at the same rate.
HINT: Slice shallots by hand.

Butter the dish, place a single layer of sliced shallots on the bottom of the pan, top with potatoes laid in a single layer, top with shredded cheese, spoon 1/4 cup of warm cream, sprinkle with salt and pepper, drizzle a light sprinkling of flour and repeat layering until the dish is full. The top layer should be cheese.

Here is the layering sequence again:

  1. sliced shallots
  2. sliced potatoes
  3. cream
  4. salt and pepper
  5. flour
  6. cheese
  7. repeat leaving cheese as the top layer

Keep alternating layers to the top

Top with cheese and bake

Place the filled dish on a parchment paper lined baking sheet to catch all spills. Place in a 400°F oven for 1 hour or until the dish is bubbling and golden brown on top.

We usually gobble these up pretty quickly but if you have any leftover, cut them into shapes and reheat either in the microwave or the oven until nice and warm in the center.

Variations on the theme:

  • Scalloped Potatoes: Leave out the cheese and make sure enough cream covers the top slightly. Top with breadcrumbs; Bake the same way.
  • Add your favorite herbs for an herbal variety.
  • Use different cheese: Goat cheese, Havarti, Asiago, fontina, add some bleu to the mix.
  • Use cheese that you know will melt nicely. If you want to make this with cheddar, please add some hoop cheese to it for melting purposes. Cheddar does not melt well all on its own.

I’m sure your family will enjoy this as much as mine does. Your home will smell wonderful as they cook. Since they are in the oven for so long, it is a good time to plan a baked chicken or pork chop to go along with the potatoes.

Sometimes I’ll have a plate of just potatoes au gratin for lunch, if there is any left over.

Mushroom Risotto

I made mushroom risotto just to see if there could be any left over to make the risotto balls Frugal Feeding made. Only he called them Rosemary and Garlic Arancini. I suppose that is the correct Italian name for them more than “risotto balls.”

By any other name they are still just as good.

Let’s make  Mushroom Risotto and if you have any left, you can hop over to Frugals site and make the Arancini.

But first a note on how to clean mushrooms:

Think of them like little sponges. if you run them under water or (horrors!) soak them in a bowl of water to ‘clean’ them, you are water logging the poor little mushroom. The mushroom will release that water while you cook, you will not get a good color on them when cooking. Instead of saute, you will be braising them.

Instead, wipe them with a clean towel, trim the tough part of the stem (shiitake – remove the entire stem, it is tough) your are ready to go.

Portobello mushrooms can be ‘peeled’ to create a prettier mushroom. Use a spoon to scrape out the gills and then peel the lip of the mushroom to remove the top layer, peeling towards the top middle of the mushroom cap.

Save the scraps for flavoring stocks for soup or sauces.

Save those scraps! Freeze them.

Mushroom Risotto

1 cup arborio rice

2 tablespoons finely minced shallots

1 tablespoon  fresh minced garlic

1 cup cleaned and sliced fresh mushrooms of your choice

White button and shiitake mushrooms

If you use Portobello mushrooms, be sure to clean the gills out from under the cap. They turn everything a dark, almost black color.


1 up to 1 quart of warm chicken stock

If you use a stock that has salt in it, adjust your salt flavor at the end. Salt concentrates as liquids evaporate.

1/2 cup dry white wine

1 cup Parmesan cheese, shredded, not graded

1 tablespoon butter

Salt and pepper to taste

Cook the mushrooms first in the same pan you will cook the risotto. This allows the mushrooms to develop that deep flavor for which mushrooms are so famous.

Sautéed Mushrooms

  • 1 pound mushrooms of your choice, cleaned and sliced
  • 2 tablespoons oil or clarified butter
  • 1 shallot sliced
  • 2 clove fresh garlic smashed and minced
  • 1/2 cup white wine
  • 1 sprig fresh thyme
  • salt and pepper to taste

Heat the pan over high heat, add oil.

Add mushrooms sliced shallots, garlic saute until they begin to develop color and start to release their juices. Add white wine to deglaze and cook until the pan is nearly dry.

Now add the rice and continue with the risotto recipe below.

Note: This is a great way to saute mushrooms for any other way you want to eat mushrooms, steak, Quiche, soup

  • Heat the chicken stock in a pot and have it nearby with a ladle.
  • In the same pan you cooked the mushrooms above, add the rice.
  • Saute for 2 minutes. Stir to coat the rice with the mushroom goodness in the pan.
  • Ladle about 8 ounces of warm stock into the rice pan.
  • Stir to combine and continue stirring until the stock has been absorbed.
  • Repeat 3 more times.
  • Taste the rice, there should be a slight bite to the grain, known as “al-dente.”
  • The last addition will be 1/2 cup white wine, stir until the wine has been absorbed.
  • Stir in the Parmesan cheese and the butter.
  • Adjust seasonings and serve.

Saute the mushrooms, shallots, garlic, thyme and wine to develop flavor in the mushrooms before adding rice. Cook down to nearly dry again.

Add rice, saute to coat the rice with oil and mushroom jus

Add warm stock and stir until absorbed

Stir until all stock has been absorbed; add more stock

Add more stock and keep stirring

I learned to make risotto the old-fashioned way; by stirring a lot. Stirring makes it creamy. There are some methods where you cook it much like you do plain rice. I don’t find the results as creamy as the stir-like-a-madman method.

Besides, it gives your arms a decent work out.

If you want to make risotto and hold it for serving later, take it only half way through the steps of adding stock. Cool it down.

When you are ready to finish, heat more stock, add the rice and finish the cooking process.

Serve immediately as risotto can get quite gluey as it cools down after it finishes cooking.

I made enough to have some leftover for the Arancini but when I went to make them, there was no leftover risotto.

So the myth continues, there is no such thing as leftover risotto.

I haven’t seen much leftover wine either.

Why is that?

Robert said to just make more risotto and make the Arancini immediately.

I think he just wants more risotto.

“Feed Me Chef!”

Our dear friend June had a mile marker birthday recently. Our gift to her was to go out to the “Feed Me Chef” dinner at Zink American Kitchen in Charlotte, NC.

What a wonderful experience! The premise of the Feed Me Chef dinner is to sit around the bar area that is right up to and nearly in the kitchen. The chef will then create a 5 course meal for you of their choosing.

Sitting there, you get a birds-eye view of the kitchen operations from gearing up, getting slammed with the dinner rush and then slowing down slightly as we left 2 hours later.

The hostess had called earlier in the day to ask about allergies, diet restrictions and if there was anything in particular we wanted. These parameters were given to Chef Amy who in turn gets to be creative and create a 5 course meal.

The kitchen crew operated very well together. There was clear communication, effective movements and great looking food. Everyone knew their job and did it well. It was great entertainment.

And you want to know something? In this open kitchen all the crew, both front and back of the house, were so polite not only to the guests, but most important, to each other.

“Please, thank you, you’re welcome, excuse me”, all used frequently amongst the staff even when they were at their slammed best. How refreshing.

Our chef this evening was Amy Kumpf who was delightful, fun, charming, very skilled and knowledgeable in her craft. If was a lot of fun to watch her and her crew work through the dinner rush, very smooth.

She planned a menu for us and paired the wine for each course. Settling in, our meal began.

Course #1

Yellow Tomato Caprese Salad

Yellow Tomato Caprese

Instead of using fresh basil, Amy fried the basil for the salad. The result was delicate umami touched with sweet tomato that danced around in your mouth with a party going on.

Amy reduced balsamic vinegar to a coating glaze which she drizzled over the assembled salad. She chose yellow tomatoes, delicious fresh mozzarella, fried basil and balsamic reduction.

Definitely whetted the appetite. It was beautiful and delicious.

To pair wine with this course, Amy chose Cooper Mountain Pinot Grigio from Willamette Vally.

Perfect pairing.

Course #2

Plancha Seared Snapper with Fire Roasted Tomatoes and Cucumber Salsa

This dish alone would be worthy to come back for again and again. Fabulous!

The cucumber salsa had mango, red peppers, mint, honey and other things. It was very well made, knife skills showed.

Fire roasted tomatoes are roasted and grilled with red peppers and blended to create  a lovely sauce they use on several dishes from pizza to our snapper. This was served in  crisp white Moroccan style tangine.

Wine paring: Chamisal Vineyards 2011 Central Coast Stainless Chardonnay (unoaked) Crisp and perfect with the complex flavors of this dish.

Course #3

Hickory Salmon

Hickory Salmon with Slow Cooked Potatoes and Asparagus

Another genius dish. The potatoes went so well with the salmon, sweet 100 tomatoes are slow roasted to add a sweet acid punch to the richness of the potatoes and  salmon. Additionally on the plate were fennel confit and melted leeks. Eating this was a pure pleasure experience.

Wine pairing: For some odd reason I didn’t record the Pinot noir chosen for this dish. It was the only one we thought didn’t complement the food. We enjoyed the wine tremendously, just didn’t like the paring.

Perhaps another Pinot with a fruitier base as most US Pinots are known. This one was in the “Burgundian” style which made it rich and robust with full tannins. These rich robust wines are normally my preference. But not with this dish.

The sweet salty nature of the salmon and the delicate texture of the fish wanted something a bit milder.

Course #4

Grilled Flank Steak with Smoked Tomato Cream Sauce and Shaved Asparagus

Seasoned and grilled to perfection. The meat was tender, juicy and full of flavor.

Shaved asparagus was created by peeling asparagus length wise with a “Y” peeler. You can do a lot with a vegetable and a Y peeler. Here, Amy created ‘pasta’ for us with thin shavings of asparagus.

By this time we were getting full.  So I tasted everything and then decided to bring the rest of this dish home to eat for lunch and jump into dessert.

Warm Apple Compote, Whipped Caramel Cream, Orange Confit, Dulche de Leche and Dark Chocolate

I got a pleasant surprise when the dessert chef came out. She was a student of mine. She said she was nervous but for no reason. Her dessert fit the bill perfectly. (No flour products – part of Junes diet; hence the asparagus pasta.)

All in all, we had a great meal and an outstanding evening. I could eat like that every time we go out. The idea of not knowing what your next course will be is intriguing.

We will have to do this again soon and I suggest you go find a place near you who does this kind of service. Ask at your favorite restaurant. Sometimes this style of dining is called a “Chef’s Table” and sometimes tables are in the kitchen. Depends on what the health code is in your area. You may discover such tables need to be reserved well in advance.

We had a delightful interaction with the staff. The entire evening was great fun.

Naturally, if you find yourself in Charlotte, NC, head over to South park and stop in at Zink and say “Feed Me Chef!”

You will be glad you did.

How to Roast a Chicken

Here is another basic skills post about how to roast a chicken. The same principle applies to most birds, large or small. Ducks are just a bit different due to the amount of fat on them.

To select a whole chicken, carefully look at the wing tips, they should not be brown in any way. Slightly red is OK but no brown. Look at the neck area, same thing. These areas show age on market chickens. If they are fresh, they will be ‘chicken color’ and possibly red tips on the wings. No brown, green or purple.

The chicken should also not have any odor. Give it a sniff. Pass it by if you smell anything.

Sometimes the inside of the bird contains a small bag of the heart, liver, neck and gizzard. Remove this from the inside of the bird. Throw it away unless you eat heart, liver, neck and gizzard. My father made wonderful sauce from these parts. Sometimes I saute the hearts and livers but there is only one inside each bird so they become the cooks treat. YAY!

Thoroughly rinse the bird inside and out. Pat the bird dry.

Carefully, using your fingers, loosen the skin but do not tear it.

Look carefully, see the butter under the skin?

Insert compound butter between the skin and the meat, smoosh it around so it almost covers the meat and then rearrange the skin back in place. This will baste the meat with herbs and butter while the bird roasts.

What is compound butter? Soft butter with herbs and seasonings mixed in. Any combination, any flavors, your choice. Toss it in a mixer, mix it up, place in a container and use it anywhere you would use butter. The butter I used here contained thyme, garlic, lemon, shallot and pepper.

To give the bird some flavor while roasting, insert herbs, onion and garlic into the cavity. For this bird I used rosemary, thyme and onion and a bay leaf.

For food safety sake, if you want stuffing, bake it in a separate pan. See note below regarding food safety.

On the bottom of the roasting pan, place chopped carrots, celery and onion (25% carrots, 25% celery, 50% onion ratio) and 1/2 cup or so of water or stock.

Professionally, we call this vegetable ratio “mirepoix”.

Tie the legs together with butchers twine or cotton string. Run the string around the legs and thighs and tie it off under the wings. This holds the bird together in a nice compact bird-like shape, controls the legs and plumps the breasts.

This is how you get a good-looking finished bird that isn’t splaying its parts all over the place.

Season the birds skin. I used Montreal Steak Seasoning for this one. Season as you like.

Season, tie the legs and truss the chicken. Place on top of vegetables to roast.

Place the tied and stuffed bird in the roasting pan on top of the vegetables.

Roast the bird in a 350°F oven for about 2 hours or so for a 3 pound bird. Please use a thermometer to test for 180°F internal temperature in the thigh, not near a bone.

The dark meat takes longer to cook so you test there. Please be sure to cook your chicken all the way.

There is nothing as unappealing as cutting into a whole roasted bird and have blood come out. Obviously, it goes back into the oven to finish cooking, if that happens.

When the bird is done, allow it to “rest” for about 15-20 minutes before carving. This is when I prepare the vegetables and put the final touches on the meal.

Food safety really comes into play with handling chicken.

  • Keep the bird cold.
  • Sanitize the work area with a mild bleach after preparing and handling the bird.
  • We are trying to avoid contaminating our families with Salmonella and Campylobacter jejuni in particular.
  • If your bird is frozen do not allow it to thaw on the counter or in the sink. Put it under cold water that you change frequently or in the refrigerator which takes 2-3 days to thaw, so plan ahead.
  • Always sanitize everything that chicken and your hands come in contact with during preparation with a mild bleach solution when you finish. Knives, boards, spoons, counters, sinks, knobs, handles, towels, aprons, etc.

To make a sauce, use the drippings in the bottom of the roasting pan. Deglaze with chicken stock or white wine. Strain the liquid from the roasting pan into a sauce pot. Bring to a simmer.

Mix equal parts of butter and flour together in a small bowl. Drop small pea sized pearls of the flour and butter mixture into the simmering stock, whisk to incorporate. Season as desired. Simmer for 10-15 minutes to cook out the starch taste. Finish with a pat of cold butter whisked in, adjust salt and pepper. Strain again if desired.

Oh, Grasshopper!

Fair warning: If you are squeamish about grasshoppers or insects, move on to the next post. Just a fair warning.

There is a student in my Garde Manger class who brought grasshoppers to class.

Even though eating grasshoppers is not the mainstay diet of my readers, I thought it was so interesting I had to write about it. I am not an extreme food consumer, but if it was all there was to eat, I speculate a way would be found.

I couldn’t bring myself to eat one, however, several students were excited to try.

Yong made them nice and crispy and made a Korean style teriyaki sauce and another of his teammates, Andrew, covered them with dark chocolate. Some were paired with cheese on a cracker.

Yong was telling us how in Korea, they raise grasshoppers in very clean ‘grasshopper farms’. I visioned tall blades of lush grass with jumpy, springing green grasshoppers leaping blissfully from blade to blade.

It was fun to watch the adventurous eaters explain: “crunchy like a grassy twig”, “Can I pull the legs off?”, “I don’t like the wings”, “Are they overcooked?” “They make me want to jump around.”
